Aloha Salad in a Jar

Feel the Hawaiian Aloha spirit with this tropical salad and pineapple vinaigrette dressing.
ALOHA SALAD IN A JAR RECIPE
Makes: 4 jars
Time: 10 minutes to assemble
Ingredients for Salad
- 4 cups romaine
- 4 cups kale
- 1 cup red bell pepper, thinly sliced
- 1 cup edamame, shelled
- 1 whole pineapple, cubed and reserve juice
- 4 mandarin oranges, peeled and separated into wedges
- 12 tbsp (3/4 cup) macadamia nuts
- 8 tbsp (1/2 cup) toasted coconut strips
- 4 tbsp green onion, chopped
Ingredients for Pineapple Vinaigrette
- 4 tbsp (1/2 cup) fresh pineapple juice
- 3 tbsp olive oil
- 1 tbsp white wine vinegar
- salt and pepper to taste
Directions
Combine all ingredients for vinaigrette and mix well.
Measure and add 2 tbsp of the vinaigrette to each jar.
Add 1/4 cup each of red bell pepper and edamame to each jar.
Add about 1/3 cup pineapple cubes and 1 mandarin orange to each jar.
Add 2 cups mixed romaine and kale.
Top each jar with 3 tbsp macadamia nuts, 2 tbsp coconut strips, and 1 tbsp green onion.
Place top on jar and tighten.
Store in refrigerator and eat within 5 days.
