Berry Quinoa Salad

My favorite kinds of salads have a hint of sweetness with fresh fruit and a fruity vinaigrette. These are especially good after eating many "savory" salads. It's a nice break so that you don't get tired of eating salads.


The quinoa makes this salad filling without using any meat.






BERRY QUINOA SALAD IN A JAR RECIPE

Makes: 4 jars

Time: 10 minutes to assemble


Ingredients for Salad

- 4 cups spinach

- 4 cups arugula

- 1 1/4 cups strawberries, quartered

- 1 1/4 cups blueberries

- 3 cups cooked quinoa

- 12 tbsp (3/4 cup) goat cheese, crumbled

- 12 tbsp (3/4 cup) sliced almonds

- 8 tbsp (1/2 cup) raspberry walnut vinaigrette


Directions

  1. Measure 2 tbsp of salad dressing and pour into bottom of each jar.

  2. Add about 1/3 cup each of strawberries and blueberries to each jar.

  3. Add 3/4 cup of quinoa

  4. Add 3 tbsp of goat cheese to each jar.

  5. Add 1 cup each of spinach and arugula.

  6. Top with 3 tbsp sliced almonds.

  7. Place top on jar and tighten.

  8. Store in refrigerator and eat within 5 days.

  9. When ready to eat, dump out contents of jar onto a plate for best results. (This salad does not shake well due to the quinoa.)
