This salad reminds me of a Chipotle burrito bowl. I cooked a big batch of chicken taco meat in the slow cooker for a dinner and then used the leftovers for these salads. This slow cooker recipe is also posted below.
I included white onion and roma tomatoes to emulate pico de gallo. This time I used a bottled cilantro lime dressing as it was a busy week and sometimes I need to cut corners to get these salads done! I also used instant cilantro lime rice.
This recipe makes 8 salads but you may easily cut in half if you only need to make 4.
BURRITO JAR RECIPE
Makes: 8 jars
Time: 10 minutes to assemble
Ingredients
- 16 cups romaine, shredded
- 1 cup white onion, diced
- 2 cups roma tomatoes, diced
- 2 cups black beans, rinsed and drained
- 2 cups rice of your choice (I used Uncle Ben's cilantro lime)
- 2.5 cups taco chicken, shredded (see slow cooker recipe below)
- 1 cup queso fresco cheese, crumbled
- 1 cup fresh cilantro, chopped
- 1 cup cilantro lime salad dressing (I used Brianna's)
Directions
Measure 2 tbsp of salad dressing and pour into bottom of each jar.
Add 2 tbsp of white onion.
Add 1/4 cup each of tomatoes, black beans and rice.
Divided chicken evenly among all 8 jars (about 1/3 cup per jar).
Add 2 tbsp of cheese to each jar.
Pack 2 cups of shredded lettuce.
Top with 2 tbsp of cilantro.
Place top on jar and tighten.
Store in refrigerator and eat within 5 days.
SLOW COOKER TACO CHICKEN RECIPE
Ingredients
- 4 lbs boneless skinless chicken breasts
- 1 cup chicken broth
- 1 tbsp chili powder
- 1 1/2 tsp ground cumin
- 1/2 tsp paprika
- 1/4 tsp onion powder
- 1/4 tsp garlic powder
- 1/4 tsp oregano
- 1/4 tsp crushed red pepper
- 1 tsp salt
- 1 tsp pepper
Directions
Place chicken in slow cooker.
Combine chicken broth and taco seasoning in small bowl and pour over chicken.
Cook on Low for 6-8 hours.
Shred chicken and let sit in slow cooker on Warm for 30 minutes.
