Chicken Broccoli Divan

This is one way I use leftover chicken from meal prep salads. I always cook extra so that I have some to use for a family dinner that week. This meal is very simple and quick to make and it is my husband's favorite. He usually is not a big fan of broccoli, but he loves it in this dish.

This is also a great meal to make if you have picky young children who do not like "saucy" foods. Just set aside some chicken, steamed broccoli and cheese for their dinner. I will put these on a plate along with the chicken broccoli divan so that my kids can try the divan if they wish or at least get used to the idea of it.
This meal can be prepared in advance. Just do steps 1-6, cover and place in refrigerator. Cook within 2 days. You will need to add about 5 minutes to the baking time so that it heats all the way through.
CHICKEN BROCCOLI DIVAN
Makes: 4 servings
Time: 10 minutes prep, 20 minutes in oven
Ingredients
- 2 1/2 cups cooked chicken, cubed
- 1 broccoli head (about 3 cups), cut into florets
- 1 can cream of chicken soup (I used gluten free)
- 1/3 cup skim milk
- 1 cup shredded cheddar cheese
Directions
Preheat oven to 400 degrees.
Steam broccoli florets for about 3 minutes until they are just becoming tender (check by inserting a fork)*
In a 9 inch pie dish, spread out the chicken and the broccoli.
In a small bowl, combine milk and soup.
Pour the soup mixture over the chicken and broccoli.
Sprinkle with cheese.
Bake in oven for about 15 minutes.
Place in broiler set at low for 3-4 minutes until cheese is golden brown.
* Careful not to overcook the broccoli as it will become too mushy in the oven.
