Favorite Breakfast Cookies (Gluten Free)

This is the favorite breakfast in our house - the kids love it and it's easy for us parents to serve. My kids will eat anything called a "cookie". They believe that if it's considered a cookie, it must be good! I even eat these from time to time if I need to grab something quick for breakfast and want something a little sweeter. It's a much better choice than eating store bought, processed breakfast bars.
To make these, you only need a mixing bowl and spoon - no electric mixer needed! They are easy to make and even easier to freeze. After the cookies cool completely from baking, place in a marked freezer bag and store up to 3 months. At breakfast time, take out however many needed, wrap in a paper towel and microwave for 10-15 seconds. I like to serve with some fresh fruit and yogurt or a smoothie.
FAVORITE BREAKFAST COOKIES
Makes: 16 servings
Time: 30 minutes
Ingredients
- 3 bananas
- 1 egg
- 2 cups rolled oats
- 1/2 cup almond flour (or flour of your choice)
- 1/2 cup peanut butter (or nut butter of your choice)
- 1 tsp ground cinnamon
- 1 tsp vanilla extract
- 1/4 cup craisins (or other dried fruit)
- 1/4 cup chocolate chips (optional)
Directions
Preheat oven to 350 degrees.
Line 2 baking sheets with parchment paper.
In a medium mixing bowl, mash bananas.
Add all other ingredients and stir to combine.
Scoop about 2 tbsp of cookie dough and place on baking sheet.
Use back of spoon to lightly smash down.
Bake for about 15 minutes. (Bottoms of cookies should be golden brown)
Allow to cool completely before placing in freezer bag.
Store in freezer for up to 3 months.
