Grandpa's Garden Salad in a Jar

This is a classic garden salad made with whatever greens and veggies are available fresh from the garden. It is nostalgic for me as this was a summertime staple side dish of my childhood. My grandpa had a vegetable and herb garden as did my dad. I would help them plant, water, and pick the veggies. My dad is now carrying on the tradition of vegetable gardening with my children.


Feel free to add cheese (I like to use colby) and/or meat to make this salad hearty. The cheese and meat would be added to the jar after the veggies and before the greens.


What makes this salad delicious is the freshly added parsley and the homemade vinaigrette. Growing up, we would use whatever bottled dressing was in the refrigerator. I like the elevated flavor that a freshly made vinaigrette brings to this simple salad.




GRANDPA'S GARDEN SALAD IN A JAR RECIPE

Makes: 4 jars

Time: 10 minutes to assemble


Salad Ingredients

- 6 cups mixed greens - I used kale, red kale and bibb lettuce

- 1 cup cherry tomatoes, halved

- 1 cup carrots, sliced

- 1 cup radishes, sliced thin

- 1 cup cucumbers, sliced

- 1 cup kohlrabi, cut in thin strips

- 1 cup sugar snap peas

- 1/4 cup watercress, chopped

- 1/4 cup parsley, chopped

- 1/2 cup croutons (I used gluten free quinoa croutons)


Dressing Ingredients

- 1/4 cup olive oil

- 2 tbsp white wine vinegar

- 2 tbsp fresh lemon juice

- 2 cloves garlic, minced

- 1/2 tsp honey

- 2 tsp water

- salt and pepper to taste



Directions

  1. In a small bowl or jar, combine all ingredients of dressing and mix/shake.

  2. Measure and add about 1.5 tbsp of the dressing to each jar.

  3. Add 1/4 cup each of the following ingredients in this order - cherry tomatoes, carrots, radishes, cucumber, kohlrabi, and snap peas.

  4. Add about 1.5 cups mixed greens.

  5. Top with 1 tbsp each of watercress and parsley.

  6. Add 2 tbsp of croutons.*

  7. Place top on jar and tighten.

  8. Refrigerate and eat within 5 days.


*Croutons become soggy in the jars so it is recommended to add these only on the day of consumption.
