"Man Salad" in a Jar

Convinced my husband to eat healthier by making this easy to grab and eat on the go salad with his favorite toppings aka a good amount of bacon.


He discovered that instead of picking up junk food at a gas station or hitting up a fast food drive thru, this salad gives him more energy and makes him feel better. I even threw in some jicama due to it's health benefits!


If you want to get your man on board, I recommend surprising him with a manly lunchbox and he'll be proud to show off his new healthy routine at work!


"MAN SALD" IN A JAR RECIPE

Makes: 4 jars

Time: 10 minutes to assemble


Ingredients

- 6 cups mixed greens

- 1 cucumber, peeled and chopped

- 1 cup carrot chips

- 1 cup cherry tomatoes, halved

- 1 jicama, peeled and julienned (cut in thin strips)

- 8 hard boiled eggs (peeled and sliced)

- 1 cup shredded cheddar cheese

- 8 tbsp bacon bits

- 8 tbsp favorite dressing - I used a Caesar vinaigrette


Directions

  1. Measure 2 tbsp of salad dressing and pour into bottom of each of the four jars.

  2. Add 1/4 each of the following ingredients to each jar in this order: cherry tomatoes, carrots, cucumbers, jicama.

  3. Add 2 sliced hard boiled eggs to each jar.

  4. Add 1/4 cup shredded cheddar and 2 tbsp bacon bits to each jar.

  5. Top each jar with 1.5 cups of mixed greens

  6. Place lid on jar and tighten.

  7. Store in refrigerator and eat within 5 days.
