Peach Caprese Salad in a Jar

This salad combines the delicious flavor of traditional caprese with fresh peaches. The arugula and fresh basil make it taste very fresh and flavorful.


If you are picky about the texture of your peaches, you may treat this ingredient like avocado and only add it to the first couple of salads. Later in the week, you can cut up more peach and throw in the top of the salad for those remaining.




PEACH CAPRESE SALAD IN A JAR RECIPE

Makes: 4 jars

Time: 10 minutes to assemble


Ingredients

- 4 cups mixed greens

- 4 cups arugula

- 3 cups heirloom cherry tomatoes, halved

- 2 cups peaches, chopped

- 1 cup mozzarella cheese pearls

- 8 tbsp (1/2 cup) pine nuts

- 4 tbsp (1/4 cup) fresh basil, chopped

- 3 tbsp olive oil

- 3 tbsp balsamic vinegar



Directions

  1. Pour olive oil and balsamic vinegar into a jar and shake well.

  2. Measure and add about 1.5 tbsp of the vinaigrette to each jar.

  3. Add 3/4 cup cherry tomatoes to each jar.

  4. Add 1/2 cup peaches to each jar.

  5. Add 2 oz (4 tbsp) mozzarella pearls to each jar.

  6. Fill each jar with 1 cup each of mixed greens and arugula.

  7. Top with 2 tbsp pine nuts.

  8. Sprinkle about 1 tbsp chopped fresh basil into each jar.

  9. Place top on jar and tighten.

  10. Store in refrigerator and eat within 5 days.
