Raspberry Kiwi Salad in a Jar

A unique summer salad that will get you out of any salad rut. Raspberries, kiwi and cucumber all come together nicely with the lime vinaigrette. Add a few mint leaves to the very top for an extra fresh taste.


Feel free to add chicken or tofu to your jar after the fruit and before the cheese to make it extra hearty and filling.







RASPBERRY KIWI SALAD IN A JAR RECIPE

Makes: 4 jars

Time: 10 minutes to assemble


Ingredients for Salad

- 8 cups mixed greens

- 1 cup rasberries

- 1 cucumber, sliced and quartered

- 2 kiwi, sliced

- 12 tbsp (3/4 cup) goat cheese, crumbled

- 12 tbsp (3/4 cup) chopped walnuts

- 8 tbsp (1/2 cup) lime vinaigrette

- fresh mint leaves, chopped (optional)


Ingredients for Lime Vinaigrette

- 1/4 cup olive oil

- 1 tbsp lime juice

- 2 tsp honey

- 3 tbsp white wine vinegar

- salt and pepper to taste


Directions

  1. Combine all ingredients for vinaigrette and mix well.

  2. Add 2 tbsp of the vinaigrette to each jar.

  3. Divide cucumber evenly among the four jars.

  4. Divide kiwi evenly among the four jars.

  5. Add 1/4 raspberries to each jar.

  6. Add 3 tbsp goat cheese to each jar.

  7. Top each jar with 2 cups of mixed greens and 3 tbsp walnuts.

  8. Optional - add a few chopped mint leaves.

  9. Place top on jar and tighten.

  10. Store in refrigerator and eat within 5 days.
