Simple Healthy Chicken Salad

I always cook extra chicken when I meal prep salads so that I have some leftover to use for a family dinner that week. This recipe is for a simple and healthy chicken salad. Put it on toast, crackers, or eat as a lettuce wrap on romaine. You can even add this to mixed greens to make a chicken salad salad!

Prepare ahead of time and dinner is ready instantly. If you have picky kids, set aside chicken, celery, and grapes to serve them a "deconstructed" chicken salad.
SIMPLE HEALTHY CHICKEN SALAD
Makes: 4 servings
Time: 15 minutes
Ingredients
- 2 1/2 cups cooked diced chicken
- 1/2 cup plain nonfat Greek yogurt
- 2 tbsp low fat mayonnaise
- 1tbsp dijon mustard
- 2/3 cup grapes, halved
- 1 cup chopped celery
- 1/4 cup sliced almonds
- 1 tsp dill weed
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- salt and pepper to taste
Directions
In a medium bowl, mix together Greek yogurt, mayonnaise, and dijon mustard.
Add dill, garlic powder powder, onion powder, salt and pepper. Stir.
Add chicken, grapes, celery, and almonds and mix until well combined
Cover and store until ready to serve.
