Strawberry Poppyseed Salad in a Jar

A fresh and fruity summer salad that is great to have when craving something a bit sweeter. This is my go to salad to prepare for the week since I always have a supply of strawberries and blueberries for my kids. I chose to use a prepared poppyseed dressing to save time.







STRAWBERRY POPPYSEED SALAD IN A JAR RECIPE

Makes: 4 jars

Time: 10 minutes to assemble


Ingredients for Salad

- 6 cups mixed greens

- 1 cup strawberries, quartered

- 1 cup blueberries

- 2 cups cooked chicken breast, cubed

- 12 tbsp (3/4 cup) goat cheese, crumbled

- 12 tbsp (3/4 cup) sliced almonds

- 8 tbsp (1/2 cup) poppyseed dressing


Directions

  1. Measure 2 tbsp of salad dressing and pour into bottom of each jar.

  2. Add 1/4 cup each of strawberries and blueberries to each jar.

  3. Add 1/2 cup of chicken.

  4. Add 3 tbsp of goat cheese to each far.

  5. Top with 1.5 cups of mixed greens and 3 tbsp sliced almonds.

  6. Place top on jar and tighten.

  7. Store in refrigerator and eat within 5 days.
