Turkey Meatballs w/Veggies (Gluten Free)

Try sneaking some finely chopped veggies into your favorite meatball recipe! It is a good way to use up extra veggies as well as get your family to eat more veggies.
This is my recipe for gluten free oven baked turkey meatballs. To make them gluten free, I use crushed almond flour crackers. The veggies I added are spinach, carrots, and onion.
I used 2 lbs of ground turkey so that I would have leftovers to freeze. I love to always have frozen meatballs on hand as they are so easy to thaw in the microwave - thaw, add your favorite sauce and serve!
TURKEY MEATBALLS W/VEGGIES
Makes: 8 servings
Time: 30 minutes
Ingredients
- 2 lb ground Turkey
- 2 eggs
- 1/2 cup almond flour crackers, crushed*
- 1/3 cup finely chopped spinach
- 1/3 cup finely chopped carrots
- 1/4 cup finely chopped yellow onion
- 2 tbsp Worcestershire sauce
- 2 tbsp parsley
- salt and pepper to taste
Directions
Preheat oven to 400 degrees
Line 3 baking sheets with parchment paper.
In a large bowl, combine all ingredients.
From into balls about 1 inch big and place on parchment lined baking sheets.
Bake in oven for 15-20min. Rotate meatballs about halfway through baking.
Check with meat thermometer to make sure they reach an internal temperature of 165 degrees.
* To crush crackers, place crackers in a zip lock bag. Seal and smash with a meat tenderizer until bread crumb consistency is reached.
